I have a lot of success against that formation with the 4-1-2-2-1 V formation.

As he has better quality, orders:
Mentality: Defensive
Focus: Down both flanks
Tackling: Normal/Hard
Pressure: Own half.
Passing: Short/Mixed
Marking: Zonal
Offside: No
Force counter: No
If you get desperate add up arrows to the DR/DL & AMR/AML, switch to Mentality: Normal.
I think if you attack him he will nail you good and proper on the counter attack.

Orders can be flexible, there's nothing wrong with the orders you list, defensive with no counter and down the flanks seemed the better option as he has more quality.
Feel free to go either way.
