I’m not quite sure if it is possible that he would go from a 5* to a 1* in one season? However my guess is that if a team lower rated than you bought him, then he would fit into that team at that level and you would then see him at 1* (if he was at least 5 levels lower than you). You wouldn’t be able to buy him anyway I guess.

Exactly. The players on the auction are the same for all managers (regardless of level) who observe them while in the auction itself. After the player has been acquired by one of the clubs, his stats (and quality) will be scaled accordingly for the club's level. Naturally the player does not become stronger or weaker from this as the change is relevant to the level of his new club.
