Have any of you encountered Teams full of players with unrealistic player attributes? Like having tackling 1 heading 1 Speed 320 Finishing 279! How can this be?

Yes. All the time. These are commonly known as Mutant players.
You will see less of these in future now that training skills have been capped.

well, this is not unrealistic - you can make the same players.
