Young player can lasts for many seasons, they may have fast training ability which you can do power trainings and get him to his highest potential. Older players can fuel up your team if your team really need to clinch up the position, but his training ability is very poor and he will soon retire...

Add to that, young players are generally more expensive than older players. Consider young players as a long term investment while old players are a short term, easy quick fix.
