i have not noticed any 'height advantage' yet but I imagine you'd also need to factor in Heading ability.
Buffs FC - out of 7 Defenders the 2 players I see heading the most are Alex McLeish (184) and Richard Gough (194). McLeish has the better heading Q and Gough the lowest. (So maybe height is making up for Q?) Height range is from 183 - 194, 2 over 190.
Celtic Rangers - Alan Higgins (173) and Mark Hay (183). Both have a considerably higher heading Q than the others. However with CR Higgins does everything better so might be an exception and there are no DCs taller than 188.
*edit - forgot to say I don't have any Aerial Defenders /edit

PS. T11 does have a surprising amount of freakishly tall players.
In my case the lowest heading quality clear corners the most (they are always 185-197 centimeters. Also somtimes the short ones head too but rarely.
For top eleven lower than 185-170 cms is short I have seen a player with tall 160 cms
My 2 aerial defenders clear out corners so I dont worry about there heights (one of the actual useful SAs) I havent really noticed anything about height in my experiences
I've always tried to get defenders 185CM. But offensively I used to have a 175CM winger who scores a lot from corners....
So in conclusion we get the same: everything is random in this game
