If you buy a kit from the club shop, not the create your own one, the pre-made ones can you change the colors. There always seems to be better designs but they never have my teams colors.

No, you cant change the colours, what you buy is what you get.
I know through making the same mistake.
There is an option to create your own jersey. Just select the style you want and the colour combination.
*edit* - just seen the second part of your post where you're already aware of the create your own shirt! :)
