Your messages will show the recent transactions in the Transfers section, there is no complete history though.
The player's info is when you click the player's name in your roster list it brings up his page.

nope, you need to go to his new club then click to his name to see what he is going now. Click to player in the message show no stat at all

Unfortunately even your recent activity on your timeline doesn't list transfers. I suspect a transfer is actually listed as X improved a player in Top Ele....but has no details.
Only other way I know to track a player is if you played him in a match this season > go to one of those earlier matches > Ratings and click on him.
