Tomorrow I'll be playing against a player who has only two players in his starting lineup. They're higher ranked than my own players which in itself does not bother me. What does bother me a bit is how someone can field only two players. One defender and one midfielder. Is this a glitch? Or a cheat? Because said player seems to win his fair share of games even with the two players!

It means he's inactive and those players have ran out of contract and he only has 2 left but what Nordeous does is play the last line up he had. If he doesn't have enough the match will be abandoned and you will automatically win 3-0.
Oh, ok. He's got a full compliment of subs and reserves to boot. But just two in the lineup.
As I understand, if he had more than 11 players, the reserve & substitute players will be assigned to start in matches by system. Many reserves/substitute players but not all will be assigned to correct positions
If it has at least 11 players even if they do not appear in the field, the match will start without any problems, but the team will play with several improvised players, otherwise you will win the match by 3 x 0. What ever comp they are in go and see their last Fixture press on the scoreline and a separate piece will appear with goal scorer`s and then press formation between rating`s and venue, this way you can work what to counter with what ever formation they show
below is a team in my league and you think it`s 4-4-2 formation but it`s not it`s 3-5-2
