if you build anewstadium does te previous stadium's seats just go away?

no...building seats will lower the cost and build time of your stadium.

Build the seats, 1 upgrade at a time, then build the stadium (which will only take 3 days, instead of 16) to take advantage of ticket sales after each upgrade.

This. And you can upgrade other facilities more flexible, especially u-21 facility.

You'll have to rebuild the small, medium and large seats upgrades again, if that's what you mean, but it's different for every stadium. Each seats upgrade adds 6500 seats for me, I currently have the Arena, L13 stadium. Think of the seats upgrades as installments to build the next stadium.

Yes, you will not see a profit on ticket sales for many real life years.

It's up to you. I'm doing it when I have extra cash because it looks better.
