In the first match, I only got a 1-1 draw against a team a bit weaker and then I face a very bad team with low quality and all players out of position (his GK is a center forward) and I only won 4-0. I think i should have scored more than that.

Attacking down the wings, red arrows on AML and AMR, and also on DML and DMR if you dominate. If you are weaker or equal, no arrows on DML and DMR. Blue arrows on MCs if needed.
and the passing style should I go mixed? and for counterattacks?
Mixed and no counter attacks if you are attacking. Long and counter attacks if you are playing defensively.
Personally I find that 3-2-2-2-1 works better with no arrows with 'normal' mentality, that is what suites my players best especially if they are playing two games within a few hours of each other.
Not saying Potemy is wrong, it's trail and error as to what suites your own players best.
Bumping defensive stats would change the dynamics of the MF for instance, if that was your chosen formation for most of your games, having two MC's on the bench with Attack stats bumped would allow for a more defensive mentality yet still offer a strong attacking centre, or one of each.
Long term planning is the key to most formations, or bags of $$$ :)
Hmmm what makes different orders suit different teams, though? I would've thought there were confirmed good and bad orders, since we're all playing with the same game engine.
