Do you confirm that if I take over a new club I will keep everything except cash and players (I mean packs, titles, achievements and of course, tokens) ?

titles no, only the treble (if you have won it).
The others yes, confirmed.
and the money (I did it yesterday), it's 200K + 600K from the contract.
That's a disadvantage vs the new players because they start with 5M' + 50T.
One good trick you can do, is to find a team (every time you refresh the page, you have new option bot teams to take over),
with a 4* young expensive ST, with an attractive sa like F-K or 1-1. You can sell him asap and get about 1 M' for buying 3-4-5 5* veteran players with that money.

the progress in training (levels), also transfers to our new lv1 team

...but you have to go to play_old to do the transfer - if Nordeus ever decide to get rid of it then we're stuffed for making transfers to lower level teams...

I have the impression (without knowing anything from "inside") that they 'll not remove the old version till the "take over" and "history" will add to the new one with some way.
