If you're using attacking mentality, I'd recommend whole pitch pressing.
Formation wise, I haven't seen this formation before and it doesn't appear to on the counter formation table i'm looking at. That said their are similar formations, such as 5-1-2-1-1 narrow diamond and 5-3n-2. Those are countered by the 3-5-2 v and 4-4-2 classic respectively.
Personally, if it was me i'd run a 3-5-2 v so you'd have 3 DC to mark one striker and a motivated AMC as well as 1 DMC and 2 MC to account for an unmotivated AMC and 3 MC. Attacking mentality, down the flanks, whole pitch pressing, short passing, zonal, no counter, offsides on). Red arrows on DMC and maybe central DC. Blue arrows on both MC's.
Good luck!!!
Since when did 3-5-2V have an AMC?

He means that the 3 DCs can cover striker and the oppositions AMC, if motivated - and 2MCs and a DMC to cover the oppostions MCs as well as his AMC if not motivated. etc
