This can be treated as a defensive formation. So, the orders can be as follows.
mentality: defensive (normal may work)
passing focus: middle
passing: mixed or long
pressing: own half
tackling: normal or hard
marking: zonal
force counter attacks
no offside trap

The orders are for 3-2W-3N-2.
For 3-2W-2-1-2, any mentality (defensive, normal or attacking) may be used as the AMC makes the formation more attacking than 3-2W-3N-2. It depends on the opponent.
A red arrow on each wingback and using mixed focus instead of through the middle make this formation more attacking.
