I simply use 4-5-1v or 4-5-1flat against 4-5-1v, and more defensive than normal tactic against stronger team. Making in match changes if necessary. Keeping patience.

If all 5 teams are in same server, it is likely a server specific problem.

Slight delay for several or ten minutes are common. It also occurred in this season. But there is no recent one hour delay.

I cannot see the attachment. Do you mean all early matches disappeared in your fixtures lists? And matches after 11.53 are shown as normal? If yes, this is likely a bug in that server.
