As long you play only with 3 defenders I would go for normal or attacking mentality, pressing in own half and rest mixed

Im using almost same formation like you for me is going good and I have arrows exactly like you, for 3 defenders I always use full blue arrows.

Second one yes, your team is not so powerfull so better is better to don't risk to much.
