If I play a 4-5-1 V with blue arrows on the wide players, is it better to have an AML/AMC or and AML/ML in the team.
The AML/AMC is much better, but will be out of position when defending???

I think AML/ML is better option if you are not planning to play an AMC...
And why playing 4-5-1V you are using BLUE arrow's on your wide players...You should use RED arrows on your AML and AMR......
maybe he want to trick opponent and play through the middle
Neither will be playing out of position while defending. Their performance when motivated to defend will be determined by their defensive qualities. If an AML/x has been skewed for attack and physical then putting blue arrows on him will bring him out in a rash and cause nausea.
Disclaimer: Afaik, imo, depending on the weather & wind direcion......
