High definitely means you are pressing on the whole pitch, your strikers chasing defenders when they are on the ball.

I really am asking because they changed it. Of course I select High.
But is it just phrases that have changed, or has the affect in the game changed is what I really want to know.

one my first team its the old, and on my reserves it is like you described

In this case, high and low is more like the standard language of football. It shouldn't make a single change because both sets of words really mean the same thing.

For teams in same server, L25 team uses new wording while L17 team uses old one.

Just with this words, I think they are describing different things.
