I understand that all players will lose 1 star in the new season but will the quality of the player drop ? Will the transfer value of the players goes down south too ?

Nope, I don't think it will. Players will only lose a star, not lose its quality.

the value transfer will also drop but if you have have skill point`s saved and add them on then the transfer value goes back up
