I do not play much through the middle , but whenever I do I see better rating and scoring from my strikers.

But I would recommend that if your system with flank AMs work then you should keep using it.

Don't focus so much on individual rating as team overall performance.
After all we are not sure how the rating for each position is calculated.

So yes your striker may have low rating because he has low posession, low passes, low shoots , but this may be the case because the opponent defender is fully occupied on him.
If that means more space for your other attackers then dont bother changing anything.
If you underachieve in attack in general, then yes proceed with changes
