During a challenge I only played with defenders and DM. Someone will score anyway and despite the initial formation layout they will still perform attacking manoeuvres.
It lasted about half season and score ****loads of goals.

The role per se only influences the player positioning, out of which the team only loses possession but not the player capabilities. Put a goalkeeper as ST while the whole team is positioned correctly, he will still be able to score.
