I was wondering is it better to upgrade ure stadium himself first with some normal seat upgrades or is it better to upgrade it in 1 piece?

It's the same cost and time. So, if you play daily, it's better to upgrade gradually so that you can enjoy your upgrades, or choose to build another thing.

Upgrading the seats first gives you the income from the increased seats, when completed after each phase. Doing the stadium in one go is too long before you can increased is seat income.

Go straight for the stadium upgrade. You will need to upgrade eventually anyway so don't waste money on seats alone.
