I don't understand why you would play 3 at the center and 2 defensive wing midfield. Basically you are looking to block his wingers on the defence and avoid his DMC while out number him in the middle of the park. Sounds logical but clearly the opposition is playing ultra defensive. Its man against man if you playing on the wings and if you push your dml+dmr up you're vulnerable on the counter.

4-0-2-3-1 is better IMO. Since he's playing defence he wont push his DL+DR up, your DL+DR are fine against his ML+MR, your 2 DC should handle his ST comfortably. 2 MC is a must to control possession. Push them up if you're playing 3 AMC. If you don't have 3 AMC then play 4-0-2-2(w)-2. Leave your MC still then. A formation can only be successfully counter when you read the opposition carefully and predict his tactics. If you read the "How to win against any formation" you'll see somewhere it says a formation can be changed with arrows.
