It seems to me that your opponent want to go defensive and play counterattack with his AMC as a ball feeder. I think it would be easily to stop his AMC by controlling the midfield with 4 or 5 midfielders. And since he removed his DMC and now has only one MC, try hitting him in the center.

Just looks like he's short of players and is putting his only available players into their preferred positions.
If I were you, I'd concentrate on putting my strongest team out, and not worry about countering his formation.

Your opponent will use 5 defenders, so I think playing with crosses from the flanks to your sole ST will probably like playing heads or tails of a coin. If I were you, I would go for 4-3-2-1 X-mas tree and attack on the middle with short passing. But it will depend on your current squad and your playing style.
I'll go 4-5-1v and hope it goes well. If I get an away goal he'll need to score to win 3-1.
Butterfly him, I had to face that formation in 1st game of CL and only had players to play butterfly due to injuries, I won 3-1 red arrows on both AMs and hard attacking.
