My first instinct was 3-5-2 as well. You don't need many defenders as he doesn't offer much in attack. And a 5-man midfield should let you dominate that area of the park as he doesn't have much...

Have you already tried to look back at the earlier matches,and spot the ones he had troubles with,using that formation?if he lost or drew..sometimes that helps a lot.
