okay well, i'd use the keeper with the highest handling rating. use your arrows on ML/MR and ST.

attacking, down both flanks, short/mixed, zonal, own half, hard tackling, no counter, no offside

use your scout ST as corner specialists, he could make many goals out of that.
use your ST as your free kick taker too as he would have the best attacking stats
use your ST for penalties as he has best attacking stats as well

if your lacking in attack during a match, use red arrows on your DL/DR players too to give you an extra edge in attack.
