Why would you play this game if you really don't want to play the games??
First of all, you don't have to play Association Mode if it stresses you out. Just quit your association and enjoy your weekends.
Secondly, you don't have to train your players if you don't want to.
I had five matches on Saturday (league, asso, asso, cup, league) and four more on Sunday (asso, asso, super, league). I was loving it.
The trick is to have a full 22-player roster that you can mix and match depending on your opponents. Players usually take 12-15 hours to recover to full fitness. This means you still have about 24 fitness to spend on training.
