If your DC is better and faster than his ST I use.

If the striker is better use 3 DC's with down arrow on the centre one.
Attacking, Both flanks, Whole pitch, Normal, Zonal, OS & Force counter would depend on his mentality and yours, if you go with attacking play OS, defensive, counter attack.
Check his DR/DL stats how many assists and goal they have scored should tell you if he is playing with red arrows on the counter, with only one striker I doubt he is attacking.
